Chicken Methi

Are you in the mood to make restaurant like food at
home? Perhaps its time you listened to your finer
instincts. This month, Shampa Saha of BA
(Journalism, English and Psychology) challenges our
readers to stop making a dent in their pockets and
experiment with some new food in the safe confines of their
homes for a change. But a word of caution…Chicken Methi
is a spicy dish meant only for those who like it really hot and
sizzling!
INGREDIENTS
  750 gms chicken
2 tblsp oil
2 tsp garam masala powder
1 tsp turmeric powder
1 cup yoghurt
2 bay leaves
2 tblsp kasoori methi
1 tblsp chopped coriander leaves
2 tblsp chopped ginger
2 tblsp garlic paste
2 tblsp chopped green chillies
2 cup chopped onion
1 tblsp coriander powder
Add salt to taste
DIRECTIONS
Cut the chicken into medium sized pieces and keep it
aside. Heat up oil in a deep pan. Add garam masala and bay
leaves (tejpatta) and fry it properly till the cardamoms in
garam masala starts to crackle. Mix in chopped onions and
fry until golden brown and soft.
Stirring continuously, mix the cut ginger, garlic paste,
turmeric powder, coriander powder and green chillies. Mix
in chicken pieces and beaten yoghurt and fry on a high flame
for 7-8 minutes. Mix in kasoori methi, 1 tsp garam masala
powder, fresh coriander, add salt to taste and three to four
cups of water depending on you want it to semi gravy or
gravy. Cover the pot and stirring in between leave it on a low
flame for ten minutes. Your chicken methi is ready. It tastes
yum especially when you have it with parathas.
